Macross Plus Outlaw Star is my personal fav, though honestly I think there is a lot of extremely well done anime that doesn't get to far into the mainstrem.

Trigun Full Metal Alchemist Full Metal Panic (and Fumoffu lol that spin off was hilarious) This Ugly Yet Beautiful World Bleach Bandit King Jing (short but pretty good) Gundam (any of them really...HUGE HUGE fan of Wing and Gundam X, those were my 2 favorites..somebody mentioned MS 8th team, that was good too) Golden Boy Slam Dunk Ayashi no Ceres 8th Man After (movie, but still awesome) Peace Keeper and yes Azumanga Daioh or however you spell it..was F-in HILAROUS...love that one lol Enjoy :P Fullmetal Alchemist: Brotherhood.
All. The. Way. Favorite overall? Fullmetal Alchemist. (Bet you wouldn't have guessed...) But I'm watching Kino's Journey currently and really enjoying it.
The only good animes are the movies made by Studio Ghibli. They're very, very good.

I still watch Naruto and Bleach, but though the fillers on both started to kill it. DBZ was my favorite when I was younger (as it was for everyone else). FLCL is awesome, especially the music. I <3 the Pillows. It really got me into Japanese music. Full Metal Panic is awesome, but I'm shocked no one mentioned Tengen Toppa Gurren Lagann. I absolutely LOVED it. It's my favorite series. The action, the plot, the characters. Everything is really good and over the top. Also I'll also throw Evangelion out there because it's a classic. It was WTF a bit with the plot, but I hear evangelion 2 for the PS2 explains a lot of the plot that is never explained ever, but I dunno if it's canon to the plot of the series.
Anyway, people should check out Gurren Lagann. Xet said: Shakugan no Shana!

Dragonball Z and the first few seasons of Pokemon are pretty much givens for me. Those two are the reasons why I started getting into anime, as for favourite series..
Naruto Shippuden FMA(Brotherhood) Death Note Canaan Azumanga Daioh Elfen Lied Outlaw Star FLCL Rorouni Kenshin I'm slightly torn between my overall favourite.. It's a tie between Clannad and Cowboy Bebop. I could watch Bebop forever as i'm sure many would agree, and no anime has ever plucked my emotional strings as much as Clannad did.
