"Operate menus with movement controls" will cause the analog axis that is assigned to character movements to operate as the cursor keys on the keyboard on the menus.
"Operate camera with movement controls" will do the same as above when the button is pressed, but the target will be the camera motion.
"Toggle movement, menu, and/or camera controls" will do the same as the other two mentioned functions but on a cycle manner.
Slider I am not sure but might refer to the "throttle" analog axis that some controllers have. I use a PC USB controller that works like a PS2 pad so it does not have such a button.
Hat switches refer to the PoV (Point of View) hat some analog controllers have. In FFXI it's used to control the menus or cycle targets while the cursor is on "free mode".
While this might appear to be irrelevant to the OP post, it might be related to the issue if there is or have been a game pad connected to the computer at some point.
