Also, you're probably holding your shield up all the time? Let go of your shield when the enemy is not attacking you. That way you recover stamina much faster.
Stamina management is extremely important in this game when you aren't dodging.
It has the strongest attacks in the game, I think it would be cool if a shield was capable of blocking its full breath attack so you didn't take full dmg once you staggered.
I've taken a breath attack from the red dragon before, but depending on the move, there's just no surviving. His jump + downward flame is an auto-kill, and his perched dragon breath that isn't broken up into hundreds of mini-attacks is an auto-kill. I can block a few hits of the wave-based breath attack, but it eventually kills my stamina regardless and knocks me over. It might even do more damage since my stability is high, and thus can achieve more damage by not flooring me.
Both my primaries are tanky. High HP/endurance, that wear heavy armor and heavily rely on their shield. It's just kinda how I play games. It doesn't work well in Dark Souls though, since it doesn't matter how tanky you are if you get hucked off a cliff.
Those guys are truly the first jerk enemies you meet in the game. Like Kalilla said, kicking (forward+R1) automatically breaks an enemy's guard (as long as they're not using Great Shields) and leaves them open for attacks.
I'd recommend kindling the first bonfire in Undead Burg and practicing your kicking/blocking/parrying on the guys back down the steps in the open area and the spear jerks. It's nice cuz you can farm some Souls from them and buy a few essentials from the Undead Male Merchant too (he's down the steps in the area with the spear jerks - you can roll or attack to break the boxes). You'll want to pick up the Residence Key to free Griggs in Lower Undead Burg, especially if you want to practice Sorcery (I always do it anyway cuz I love rescuing everyone! And killing them later...) and it also unlocks a house where you can pick up some Gold Pine Resin which is invaluable for your first battle against the Taurus Demon.
I'd also recommend buying a bow and some cheap arrows from him to take out the Firebomb guys that are tossing them down onto the small bridge past that first Bonfire. Having a bow is excellent for pulling enemies also, most of them don't "link" like they do in FFXI, so you can easily thin a crowd out with some pulling to get them one-on-one. Try for headshots too! You get more damage from them.
I made a hybrid build, a faith archer. So fun... I enjoy it very much. I find STR to destroy everything though and sometimes it's nice to destroy things.

Serious question... How in the hell do I kill the Taurus Demon? ***rapes the living *** out of me. I got it to like 50% one time, but mostly just oneshots me before I get the chance to do much.
There's also a thing down the steps with a giant shield or something that one shotted me.

Kindling allows you to get up to 10 estus flask when you rest at a bonefire. For the tarus demon
you can always avoid fighting the taurus demon though, if you think you got what it takes to fight havel the rock =P
i prefer skipping the taurus demon all together now cause it allows me to participate in undead burg fights easier.
also just recently discovered the antithesis to dark magic. Great magic barrier. no longer do i fear pursurers and dark bead. i smile every time i see it now cause it means a free win for me thanks to this miracle.

The video Ninjie posted is an excellent way to deal with him. Up the ladder, clear the crossbow guys, back down, pop him, run back, up the ladder, Gold Pine Resin your weapon if you have time (it *** him up), don't take too long up there - he'll jump up and kick your *** if you take awhile, plunging attack. If you're not confident with dodging and running back up the ladder, firebombs do pretty good damage against him. He's honestly a pretty tricky boss because his attacks have a long charge time, so it throws you off a bit. The best way I found to deal with him on the ground is not to lock on to him. When he readies an attack, roll through his legs and get some distance. I used to lock on to pretty much everything, but sometimes it's better not to (Iron Golem in Sen's Fortress is another good example where it's better to not lock on). He's also kind of tricky to block, because if his weapon hits behind you, it'll hit you anyway.
The best advice I can give for him (and any boss) is if you can get back and observe his attacks, it helps immensely. Half of the challenge of the game is learning mob's attacks. Once you've done that, it's just a matter of countering.
The guy down the steps is probably Havel. Big broad dude, iron armor, large ***? Yea he's rough. Best way to deal with him is to dodge roll his attacks and backstab him. You can probably wait a bit until you upgrade your weapon to take him on. He drops a nice ring (depending on your build) but it's not really necessary early on and he's more trouble than he's worth since, like you said, he can basically one-shot you.
Like Josi and Ninjie said, kindling a bonfire raises the Estus Flasks that it gives by 5. e.g. you rest at an unkindled bonfire, you get refilled to 5 Estus. After you've kindled it once, that one bonfire will always give 10. This also carries over to subsequent New Game +. Bonfires with a Firekeeper (Firelink, Anor Londo etc.) automatically start out with 10 Estus also. Later on in the Catacombs, you can kill a boss that gives you "Right of Kindling" which lets you kindle any bonfire up to three times (total of 20 Estus).
the 2 silver knight archers are going to be the death of me. i got 220 million souls from slaying hackers in the forest and i dont want to lose them -_-
