Well, this knight can appear as a mini-boss in a raised platform in the Forest of Fallen Giants. He's very tough at that stage of the game.
He can also appear in Things Betwixt if you're playing SotFS version.

I remember those guys. Hmm, maybe I should go back and actually finish DS2. I put it down out of disgust for most of how the game is, particularly weapon upgrading, but I was just real hard on it I think, because it wasn't Dark Souls 1. I wanted another Dark Souls 1 lol.

The Lost Sinner was a female, for what it's worth.

And did you notice the figure on the left shoulder of the Rotten controlling its movements?

I also like DS2 more than DS, but more so for improvements to controls, less complicated upgrading system, and the tons upon tons of equipment. DS was more unique when it came to the story though.

You are complaining about bosses and you haven't even encountered the Covetous Demon (don''t worry, it's not a spoiler. You won't even believe it's a boss).
All the great soul bosses were meh.
Well, one you haven't fought yet is kinda ok.
IMO, the DLC bosses were far superior to the normal game ones.
And most of my enjoyment in DS2 was in going through the levels, I think they were pretty well-designed and challenging (even if I strongly disliked the unnecessary changes they made to the character models, animations, iframes, stats split etc..it didn't feel like a Miyazaki game at all, because it wasn't).

My sentiment exactly.
Grats on finishing the game. Looks like it was the vanilla version. You seem to rush through areas, either that or you're really good that you don't die much. It took me much longer, but I don't binge and my pace is usually very slow.
Despite your apparent dislike for the game, I suggest giving the DLC's a try. They were much better than the main game.

You should try to beat the Darklurker.
