That's a problem I run into when I talk to people who specialize in classical music these days. Perfection of form, over soul. It's still possible to find music that you can feel people's hearts in, but you have to dig deeper to find it. Also, it helps to enjoy a lot of different genres, so you don't exhaust one rabbit hole and then just feel empty. This is how I got into a jazz kick for the last six months.
In going to some symphonies over the last decade, it's been pretty hit or miss for me. Even with the same conductor, sometimes there's energy in the room and sometimes you just can't feel it. I hope you find what you're looking for, I know it's out there.
