»As I said Sonos doesn't support Flac :P
Then don't use Sonos.

»I guess you could just do a wired system everywhere and use a connect to make it work with Flac
Always use wired if you want great sound.
Anyone know of decent blu-ray ripping software? I recently picked up this~
I've always used handbrake to rip, it should be able to rip BRD but you may need to break encryption on it first, with something like anydvdhd which they have a free trial of (and it's easy to get a keygen for it, but some may purchase it just to save the hassle).
As for a NAS, some of these:

and a spare system with a raid controller (or linux and software raid) would do just fine, if you can use linux, it should be fine for home use. If you want to get more drives and just smaller then I'd say probably raid6, if you just want like 3-4 drives and huge, raid 5. But that's just my thoughts, may want to read up on it more, I'm by no means an expert on the matter, I just have a few drives in a wd nas right now, it works decently enough, but I have a few qualms with the setup (I've had the drives in a linux box before, and it worked fine like that, but I got tired of having to play in linux and basically relearn it every few months when I wanted to change something).
